How to Make Dinner in Minutes

Start With a Slow Cooker

We are all busy with jobs, running the kids to events and practices, volunteering and maintaining a home. Everyone needs a “go to” weeknight meal that is fast, easy and inexpensive.

Getting a meal on the table is always easy when I use my slow cooker. I just get the seasonings together, chop any vegetables and store in containers the night before. Then toss them into the slow cooker the next morning and I’m off to work.

Coming home to a meal that is already prepared is priceless for me.

Here is my spicy chicken recipe. I must say that according to my husband it is tastefully spiced, but really not “spicy”. Of course he can eat jalepeno’s alone and not shed a tear! This is not that kind of spicy!


4 chicken breasts (must be frozen)

1 cup chopped, diced tomatoes

1/4 cup chicken broth

1/3 cup toasted slivered almonds

2 Tablespoons minced garlic

1 green pepper diced

1/3 cup raisins

2 teaspoons honey

2 teaspoons cumin

1/2 teaspoon cinnamon

1/4 teaspoon chili powder

1/2 teaspoon turmeric

6 tortillas



  • Put chicken into your slow cooker
  • Mix all seasonings together
  • Mix broth, tomatoes, green pepper and season mix
  • Pour over chicken
  • Sprinkle raisins over everything
  • Cover and cook on low 6 – 7 hours (any longer and chicken will shred)
  • Sprinkle almonds over chicken mixture for 30 minutes more


I served this in tortillas to get full taste. This may be served over rice, but then you might want to increase the cumin and chili powder in original recipe.
