Get Ready For The Game

Around our house, a big game means lots of friends, a big screen TV and appetizers. I like to make things ahead when I can, so beef jerky is a hit!

Here are some easy appetizers for your family and friends to enjoy.

 

GROUND BEEF JERKY

Ingredients

1 pound 80% less fat ground beef
1/8 teaspoon pepper
1 teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon dry mustard
1 Tablespoon Stevia brown sugar
½ teaspoon chipotle powder
2 teaspoons salt

Directions

  • Mix seasonings and sugar together
  • Blend seasoning mix with meat
  • Roll meat into a rectangle about ¼ inch thick
  • Cut meat into 1 inch strips (I use my pizza cutter)
  • Carefully lift strips into dehydrator trays (if your trays are solid and not vented, spray some coconut oil on tray to keep from sticking
  • Place dehydrator at 145 degrees for 12-16 hours
  • You want them to be somewhat dry but not crisp
  • Let strips cool
  • Place strips between 2 paper towels to remove excess moisture and fat
  • Store in air tight container.
  • Store in refrigerator for up to 2 weeks or in freezer for 6 months.

BEEF TURKEY JERKY RECIPE

Ingredients

 

1/4 cup soy sauce
1 Tablespoon Worcestershire sauce
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
2 teaspoons paprika

1 teaspoon chipotle powder (or liquid smoke)

1 ½ pounds 80% ground beef

½ pound ground turkey

 

Directions

 

  • Mix all dry ingredients
  • Mix sauces with dry ingredient mixture
  • Mix turkey and beef together
  • Mix meat mixture and seasoning sauce together
  • Put into glass, flat storage container and leave in fridge overnight.
  • Remove meat from container and discard any remaining liquid
  • Line a shallow pan, like cookie sheet or jelly roll pan with paper towel
  • Place meat on pan and flatten to ¼ inch thick
  • Pat top dry to remove remaining sauce
  • Cut into 1 inch strips
  • Place strips on dehydrator trays (spray with coconut oil to prevent sticking)
  • Adjust dehydrator to 145 degrees and let dry for 12-16 hours
  • You want them to be somewhat dry but not crisp
  • Let strips cool
  • Place strips between 2 paper towels to remove excess moisture and fat
  • Store in air tight container.
  • Store in refrigerator for up to 1 month or in freezer for 6 months.

 

Again, finger food it easy to prepare ahead of time and great for game day.

TRAIL MIX

Ingredients

½ cup whole almonds

½ cup sunflower seeds, hulled

½ cup cashews

½ cup walnuts

1cup mixed dried fruit (no sugar added).

Add a variety of different types of dried fruit to add up to 1 cup.

Options: Mix cherries, blueberries, apricots, raisins, banana chips, mango or dates

Directions

  • Mix nuts and seeds together and place on edged cookie sheets or jelly roll pans.
  • Bake at 350 degrees for 5 – 10 minutes
  • Let cool in pan (about 2 hours)
  • Once cooled, chop into smaller pieces
  • Place in glass bowl and add dried fruit

 

Toss nuts, fruit and seeds and store in glass container with tight lid.

CHEESE BREAD STICKS Ingredients1 package frozen bread dough – thawed1 cup grated Parmesan cheese¼ teaspoon Paprika¼ teaspoon hemp or flax seeds Directions ·         Roll out dough to 2 inch thickness·         Sprinkle cheese over dough·         Sprinkle Paprika over dough·         Cut dough into 1 inch strips with pizza cutter·         Twist individual strips·         Sprinkle each strip with seeds·         Place bread twists on baking sheet for 15 – 20 minutes (watch closely) Serve immediately or place on preheated warming trayServe with salsa, marinara or spaghetti sauce of your choice
